Cream of Pumpkin and Cod or Haddock

Ingredients
- 1 ⅓ Cups Pumpkin
- 8.5 oz Cod or haddock
- ¾ Tsp Lemon juice
- 1 Cup of Water
- A pinch of Salt
- ½ Tbsp Olive oil
- 2 ⅔ Tbsp Half and half cream
- 4 Scoops ThickenUp® Clear
- 1. Peel and clean the pumpkin, removing the peel and seeds. Cut into thin slices.
- 2. Boil the pumpkin and the cod or haddock over medium-low heat for 15 mins, covered with the lid.
- 3. Blend the pumpkin and the cod or haddock for 3-4 mins.
- 4. Add the lemon juice, the salt and the cream and blend thoroughly again.
- 5. Add 4 scoops of ThickenUp® Clear and blend again until you reach the desired consistencyŦ and a smooth texture (no lumps).
