Lentil Burger With Curry Sauce

Ingredients
- Burgers:
- 1 ¼ Cups Canned lentils
- ½ Tbsp Olive oil
- ¼ Cup Onion
- A pinch of Salt
- 4 Tbsp Water
- 2 Scoop ThickenUp® Clear
Curry Sauce:
- ½ Tbsp Olive oil
- 1 Tsp Garlic
- A pinch of Salt
- 2 ¼ Tsp Curry powder
- 6 ½ Tbsp Coconut milk
- ¼ Cup Tomato paste
- 2 Scoops ThickenUp® Clear
Burger:
1. Cook the onion in the olive oil in a frying pan over medium heat for 2-3 mins. The onion can be grated by hand with a grater or chopped into ¹⁄₁₆-inch pieces in the blender for 1-2 seconds at a time.- 2. Add the lentils, sprinkle the salt and blend well, mashing with a fork or a potato masher.
- 3. Blend the lentils with 4 Tbsp of water for 3-4 mins. Add 2 scoops of ThickenUp® Clear and blend until you reach the desired consistencyŦ and a smooth texture.
Curry Sauce:
4. Cook the curry and garlic in the oil in a saucepan over low heat for 1 minute.- 5. Add the tomato paste, the salt and coconut milk. Cook over low heat for 4 min.
- 6. Add 2 scoops of ThickenUp Clear and blend until you reach the desired consistencyŦ and a smooth texture.
Presentation:
With the help of a rubber spatula or a table knife, shape the lentils into burgers. Serve with the curry sauce.
